Pine Needles
Several species of Pine needles have been utilised in Asian cultures for hundreds of years, especially in Korea as a traditional folk remedy and potent food source during famines. One such beneficial pine species is Pinus koraiensis or Korean Pine, which is renowned for its antioxidant potential. Korean Pine needles make a beautiful and refreshing tea, delicious, with the incredible aroma of a pine forest or fresh Christmas tree.
Star Anise
Star anise is a beautiful star-shaped pod, harvested from the evergreen tree Illicium verum. Star anise is famed not only for its delicious flavor in cooking but its medicinal benefits as well. Star anise is renowned as an impressive source of several powerful phytochemicals like flavonoids and polyphenols, including Quercetin, Anethole, Shikimic acid & Gallic acid. Star anise adds a delicious warming licorice hint that pairs perfectly in a chai herb blend.
Honeysuckle
Honeysuckle (Lonicera japonica), also known as 'Jin Yin Hua' is a very popular herb used throughout Asia, in Traditional Chinese medicine (TCM), food and as a tea. The flower has a light floral scent, and a beautifully subtle sweet taste. Honeysuckle is very important in TCM, being listed as the key component of over 12 preparations within the Chinese Pharmacopoeia.
DAILY CUP
Infuse 1-2 teaspoons (2-4 g) in very hot water (not boiling) for 5-10 minutes then strain. Use up to three times daily. Best consumed without milk. Add honey to sweeten if desired.
